Confit of citrus cured Loch Duart salmon,
garden beetroot, yoghurt dressing

 

Roast Scottish diver scallops, carrot purée
spiced pork croquette, raisin and caper vinaigrette

 

Poached langoustines, potato mousse,
Osetra caviar and gribiche dressing

 

Velouté of Winter leeks and new potatoes,
smoked haddock and Ellbridge farm quail eggs

 

Slow cooked Burford Brown egg,
butternut squash, violet artichokes, tomato and thyme

 

Poached fillet of Devonshire Rose veal,
glazed sweetbreads in pancetta,
salsify, girolles and Autumn truffles

 

Port marinated duck liver,
pickled pear, hazelnut praline and brioche

Braised fillet of halibut,
buttered iceberg lettuce, hand rolled macaroni,
baby artichoke, truffle butter sauce

 

Pan fried Cornish brill,
creamed potatoes, smoked sausage,
girolle mushrooms, Puy lentils and red wine sauce

 

Line caught Cornish sea bass,
cauliflower purée, crab bonbons, baby vegetables
red pepper and shellfish vinaigrette

 

Pot roast squab pigeon, roast foie gras,
baby pak choi, orange and ginger chutney sauce

 

Loin of Andrew Morgan’s Brecon venison,
butternut squash, cannelloni of chestnuts
