The School offers a unique opportunity for anyone who enjoys cooking to perfect their skills and master new techniques through a variety of innovative courses led by Cookery School Head Chef, Ben Taylor.

Seasonal Italian

Saturday 26th November & Saturday 3rd December

Learn to create easy seasonal Italian dishes and the art of pasta making in this course. This course will illustrate the rich diversity of Italian cuisine and the importance that pasta holds within its culinary landscape.

The course costs £175 per person including arrival tea/coffee, pastries, lunch, a recipe folder, all ingredients, a cookery school bag and use of a chef’s jacket and apron.

Festive Baking

Thursday 8th December

Making mince pies, stollen and Yule logs mean it’s a busy but fun time of year for chefs and home cooks a-like. We will help you take the pressure off and show you how to make your own pastry and mincemeat filling, seasonal desserts, centrepieces and festive breads. Using the flavours of the season, you will learn how easy it is to have the wonderful smells of Christmas spices throughout your home.

Winter Warmers

Thursday 15th December

Keeping yourself well fed and the energy levels up is harder in the winter but this course will teach you some great ways to keep the cold at bay. Cooking at winter time tends to become heavier as seasonal flavours become richer with game and the winter root vegetables coming through. Slow cooked meats and stews become more popular and the warm sticky desserts like toffee pudding and crumbles using winter fruit really tempt at this time of year. You will learn how to keep cooking in winter with fresh fruit and vegetables, create wholesome family meals, heart-warming desserts and accompaniments.

Michelin Starred Cooking at Home

Wednesday 28th December

This course will introduce you to the history of Michelin, the Michelin Guide and the meaning of Michelin stars. You will then, using locally sourced ingredients (where possible) create a gourmet 3 course meal. The course will emphasise the importance of each element of the dish, its ingredients and accompaniments and the techniques in achieving the fullest flavour and overall balance.
