Capturing the flavours of Autumn is a great highlight for a chef; it’s such an interesting time of year for foraging for wild foods to garnish game birds and for making rich and tangy jams and preserves. In this course you will learn a good understanding for seasonality, an introduction to preparing and cooking game, cooking and storing preserves and jams and which exciting wild foods are available this time of year. We have a lot of great wild food available to us at the hotel as we are in the beautiful Wiltshire countryside and this course is perfect for those who like to connect with nature and cook seasonally.

- Roast breast and leg of wood pigeon, beetroot and blackberry salad
- Caramelised apple tart tatin, honey ice cream, cobnut praline
