Introduction to Patisserie

 

With our introduction to patisserie courses you can learn the basics in all aspects of patisserie to create many different sweets and even some savoury goodies.

Introduction to patisserie – part 1

In part 1 we will be looking at making different base pastry doughs like sweet pastry, choux pastry and shortbread dough to make some great sweet treats.

Dish examples are :

  • Seasonal fruit and cream tarts
  • Vanilla and chocolate eclairs
  • Lavender shortbread

Introduction to patisserie – part 2

In part 2 we shall focus on set custards and mousses to create fabulous sweets and desserts.

Dish examples are:

  • Vanilla custard slices
  • Dark chocolate mousse with cherry and hazelnut
  • Crème brûlée

Introduction to patisserie – part 3

In part 3 we shall create treats that can be eaten as a snack, dessert or part of an afternoon tea using skills and techniques found throughout the discipline of patisserie.

Dish examples are:

  • Breton sable with chocolate crémeux and pistachio
  • Vanilla and lemon scones with strawberry jam
  • Hazelnut financier with white chocolate frosting
