Westy’s Great British Menu

Head Chef of The Brasserie, Thomas Westerland (also known as Westy), is proud to present his menu.

After being crowned National Chef of Wales 2018, Westy went on to compete in  BBC Two’s Great British Menu creating a musically inspired four course menu.

STARTER

Top of the “Crops”

Slow roast garlic and rabbit Kiev, turnip puree, black pudding, baby vegetables

FISH COURSE

“Sunny Afternoon” – Stereophonics cover of The Kinks

BBQ Tenby mackerel, smoked tomato, fennel, horseradish, mackerel tartar

MAIN COURSE

The cow shed

Fillet of Welsh beef, ox cheek, leeks, crispy potato, sand carrot, steak and ale

DESSERT

“God Save The Queen” – The Sex Pistols, Never Mind The Bollocks

Garden strawberries, lemon curd, white chocolate, gold

The menu will be available from 7pm in The Brasserie.

Price: £45 per person for four courses (excludes beverages). Full payment is required at the time of booking which is non-refundable and non-transferable. Subject to availability.
