Tom Westerland, Head Chef, The Brasserie at Lucknam Park, Bath wins National Chef of Wales 2018
We are pleased to announce that Tom Westerland, Head Chef at The Brasserie has won National Chef of Wales 2018 in the Welsh International Culinary Championships.
Tom Westerland’s winning menu included Glamorgan sausage, salad of heritage beetroot, glazed pecans and beetroot ketchup, Welsh Wagyu beef, beer-braised onion, cavolo nero, black trompette, crispy onion and lapsang souchong, and Penderyn whisky cheesecake, Bramley apple, blackberry sorbet and hazelnut crumble.
Tom comments: “This award means everything to me and it shows what three years of hard work, perseverance and development can do for you. I was lost for words when they announced me as the National Chef of Wales for 2018 and I couldn’t have done it without the support of the team at Lucknam Park, my mentor Hywel Jones and my amazing Chef de Commis Thomas Herbert.”
He is the second chef from Lucknam Park to win the award, following Ben Taylor, Cookery School Head Chef in 2016.
