A Kitchen Garden with a little help from Richard Vine
Lucknam Park Hotel & Spa are delighted to announce a new Kitchen Garden in collaboration with renowned horticulturist Richard Vine. Fresh home grown micro salads will be used in the restaurants from the middle of May, and further produce will follow in June.
Lucknam have renovated the old Vinery, a historic greenhouse where they will grow an eclectic range of micro salads and herbs. The newly built 8 large raised beds, filled with over 120 tons of top soil, will have over 30 varieties of produce, ranging from alpine strawberries, rhubarb through to runner and broad beans; from edible flowers to root and brassica crops.
Richard Vine, who recently featured on Raymond Blanc’s Kitchen Secrets, comes from a farming and science background, but a chance meeting with a chef inspired him to take a horticultural path. Creating a unique fusion between the culinary world and that of the gardener, he now gardens with a chef’s eyes. Richard used to run his own company, Richard Vine Baby Salads, which supplied many top restaurants but decided to close this business in favour of his horticultural consultancy, helping chefs create their own kitchen gardens.
Michelin Starred Executive Chef, Hywel Jones, who is currently starring in the Welsh regional heat of BBC Two’s Great British Menu, will work closely with Richard Vine to choose seasonal produce for his menus in The Park restaurant and The Brasserie.

Fresh fruit and vegetables are such an important part of Hywel’s menus and it will be wonderful to have our own home grown produce, which will not only enhance the dishes but will also reduce our carbon footprint.”
