Working History

I started studying cookery at Bath College and Cheltenham College while working as a dishwasher in a local pub. Over time, I worked my way up to becoming a chef in a pub close to where I lived. I then gained experience in several pubs and cafés before moving into hotel kitchens, including The Bath Priory and Homewood Park. Eventually, I joined Lucknam Park as a Commis Chef.

What Inspired Me to Work in Hospitality?

My mum used to polish the brass in an Egon Ronay-rated pub when I was a child. I would spend time in the kitchen slicing button mushrooms with a butter knife and helping the chefs flatten cardboard boxes. They would pay me 50p for helping out.

I also spent a lot of time baking with my mum and watching cooking programmes such as The Two Fat Ladies. She always encouraged me to cook, and when I left school, it felt like the natural career path to follow.

Why Lucknam Park?

I had visited Lucknam Park a few times and was always amazed by the beautiful grounds and exceptional food. I used to save up so I could dine there, but I never imagined I would one day work at such a prestigious hotel. One day, I put on my best suit and went to the hotel to enquire about a job. To my surprise, the chef came out to speak with me. After showing him photos of dishes I had previously made, he offered me a trial shift. Even more surprisingly, I was offered a position. I have now worked at Lucknam Park for nearly 10 years. During that time, I have learned an incredible amount and achieved some fantastic milestones in my career.

How Do You Spend Your Time Away from Lucknam Park?

I spend most of my free time with my girlfriend, Fanny, who I actually met at the hotel when I first started working there. We enjoy exploring new places, trying recipes we’ve never cooked before, dining out at restaurants, or simply relaxing together and watching a good (or sometimes terrible) film.

Favourite Food

My favourite food is probably pasta. I love both making it and eating it.

Favourite Drink

My favourite drink is either Guinness or one of my girlfriend’s cocktails—she is very good at making them.

Hobbies

I’m quite obsessed with cooking, so I would definitely say it’s my main hobby. I’m always trying to learn something new or master a technique I’ve never attempted before, whether that’s a new recipe, cooking method, or skill.

Unusual Fact About Me

I’m a keen fly fisherman. I learned from my grandad when I was a child, fishing the rivers of Ireland. I’ve spent years fishing for trout and salmon and still enjoy it whenever I get the chance.
